The pink tomato from Barbastro is one of the products most iconic of Somontano and a true gastronomic landmark in Aragón. Its fame is due to some exceptional characteristics: large size, skin very thin, low acidity, plentiful flesh and few seeds. The result is a tomato that is mild, aromatic and full of flavour which shines through just as much in simple dishes as it does in haute cuisine.
Its quality is closely linked to the historic Barbastro vegetable-growing region, a prime agricultural area irrigated by the waters of the River Vero. For centuries, local farmers have selected and refined this variety, adapting it to the conditions of the land and preserving cultivation methods that have allowed its distinctive character to remain intact.
Although there are other varieties of pink tomato found in various parts of Spain and the Americas, the Barbastro pink tomato has carved out a unique identity for itself thanks to its fleshy texture, balanced flavours and exceptional culinary quality. It is no coincidence that it has become one of the most prized products among chefs, food connoisseurs and lovers of fine dining.
Its versatility means it can be enjoyed in many different ways, although many agree that the simplest recipes are the ones that best bring out its qualities. A good extra virgin olive oil from Somontano, a few flakes of salt and a sweet onion are all you need to discover why this tomato is considered one of the best in Spain.
Today, producers and market gardeners continue to work to preserve this valuable agricultural heritage, raising awareness of it and ensuring that future generations can continue to enjoy one of the great culinary treasures of the Sierra de Guara and the Somontano.
