Traditional cured meats

Generation after generation, tradition has been upheld, always striving to produce the finest products. Lamb and pork, used in a thousand different ways, result in exceptional local sausages and cured meats.

Chiretas, tortetas, longaniza… these names may sound new to our ears, but nothing could be further from the truth: these are products that have been made in our region for over a century. Be sure to savour a taste of our history.

Recipe:

Torteta with apple compote and sausage with caramelised onions.

Peel and dice the apples into small cubes, then place them in a covered saucepan to cook with a splash of lemon juice. Once the apples are soft, mash them with a hand blender or a fork (depending on your preferred texture).

Gently fry the onion in a frying pan over a low heat; when it is just right, add a little sugar and a splash of white wine, and leave it to caramelise.

Fry the sausage and the torteta, cut into pieces, in a little oil.

To serve, mix the sausage with the caramelised onion and top with a spoonful of apple compote and a slice of cake.
