D.O. Somontano wine

The Somontano Designation of Origin was established in 1984 and since then it has evolved with the perfect balance between passion and innovation.

Local farmers work closely with winegrowers from both large and small wineries.

Recipe:

Braised wild boar with a Somontano wine reduction.

In a saucepan, reduce 1 litre of wine with a little sugar, then leave it to simmer gently until it has reduced and thickened.

Meanwhile, we sauté the vegetables, sear the wild boar meat that has been marinated in wine, add the spices of your choice, then add the marinade and enough water to cover the meat.

Let it simmer until the wild boar is tender. Remove the meat and blend the sauce with the vegetables. Add the meat back in and grate a little dark chocolate over the stew.

To serve, we’ll garnish the stew with our red wine reduction, creating a fascinating blend of sweet and bitter flavours.
