Oil, flour, sugar, eggs, aniseed, almonds… time, passion, tradition, grandmothers, mothers, legends… with all these ingredients, we sweeten the lives of the residents and visitors of Somontano.
As we know that “everyone loves a sweet treat”, our range of pastries is delicious and varied, with something to suit every palate. Crespiños, Alquézar dobladillo, guirlache, pumpkin pastries, soft mostillo with cream and nuts, toasted or caramelised almonds…made according to our grandmothers’ recipes, which, just as in the past, are still made by hand in our ovens today, giving us a unique identity and telling our story.
Recipe:
Crespiños
Crack the eggs and beat them in a bowl. Add the flour, the milk and the aniseed, and continue beating with a whisk until you have a smooth batter with no lumps.
Add the borage leaves and press them firmly into the pastry.
Fry them (on both sides) in a frying pan with hot oil. Drain them on a plate lined with kitchen paper.
Chop the mint leaves and mix them with the 2 tablespoons of sugar. Place the borage leaves on a serving dish and sprinkle them with the mixture.
