Somontano D.O. olive oil

Between October and December, the olives are carefully harvested and the finest fruits are selected for the production of Olvida Extra Virgin Olive Oil.

The D.O. designation speaks of the region, of centuries-old olive trees, and of native olive varieties such as the verdeña, negral and alquezrana.

The attributes that define their characteristics (fruity, sweet, bitter, spicy, aftertaste, nutty, leafy green or grassy) reveal the complexity of sensations these exceptional oils evoke on the nose and on the palate.

Olive oil marmalade

Make a light syrup with water and sugar. Gradually add extra virgin olive oil until it thickens, then add xanthan gum. Leave to cool.
