We stroll through our hills and watch the sheep and goats being reared in an idyllic setting, grazing in the wild fields of the Sierra de Guara.

Each cheese has its own distinct character, texture and maturation period, offering a wide range of cheeses that will satisfy even the most discerning connoisseurs; our numerous international and national awards are a testament to our quality.

Thanks to our artisan cheesemakers, who strive every day to innovate whilst respecting the product, we can find both traditional varieties and new blends that never cease to amaze us.

Recipe:

Skewered cheese balls with violet jelly and coffee-flavoured quince jam.

We crumble the “Los Meleses” white mould cheese and the “Rio Vero” blue mould cheese and shape them into small balls.

Cut the “Capricho de Guara añejo” cheese and the “Capricho de Guara truffle” cheese into squares.

Alternately thread a small ball of cheese and a small square of cheese onto a long wooden skewer.

To finish the dish, we place a dollop of violet jelly on top of the balls and a dollop of coffee-flavoured quince jelly on top of the cheese squares.
